Mexican Cornbread Casserole

I made this for a quick simple dinner for my family last night. I used some store bought ingredients just for the ease and convenience, but you could do your own if you choose to do so. This usually feeds our family of 8 with little to no leftovers. We had some company last night, and they ate dinner with us, so it was wiped out quickly last night!

Brown and drain 3lb of ground beef ( I like 90/10 but whatever you have works)

Slice and chop up 1 medium onion ( I use Vidalia)

Add your onion to your cooked ground beef and cook until translucent.

Pour in one 16 oz jar of cheddar cheese (Cheese Whiz, Velveeta, Salsa con queso…whatever you fancy)

Stir well until cheese is thoroughly melted.

At this point, go ahead and preheat your oven to 425 degrees.

( I used Martha White prepackaged mix just for ease and convenience but you can make your own)

Mix 2 packages of Martha White Mexican Cornbread (just follow the direction on the back or your own personal cornbread recipe).

Add in one can of drained whole kernel corn into your cornbread batter.

Spoon out your meat, onion, and cheese mixture into your baking pan. Smooth and flatten out evenly.

Pour Mexican Cornbread batter and corn mixture on top of your meat. Shaking gently to spread and cover evenly.

Bake at 425 for 18-22 minutes until golden brown. Serve with sides of your choice.
