My mom has made these cheesecakes for our Thanksgiving dinners for as long as I can remember. Cherry filling is my favorite topping!
Mix 2 packages (8 oz each) softened cream cheese, 1/2 cup sugar, and 1/2 teaspoon vanilla.
Add in 2 eggs and mix.
Pour into a graham cracker crust shell.
Bake at 350 degrees for 40 minutes.
Let the cheesecake set out and cool.
Refrigerate for at least 3 hours.
Eat as is or add your favorite fruit topping.
